Every year I wait for the days of fresh tomatoes in order to make this amazing Gazpacho. The recipe comes from a book my sister-in-law's mom gave my mom a long time ago!
Gazpacho
-2 or 3 cloves of garlic
-2 teaspoons salt
-1/4 teaspoon cumin
-2 tablespoons vinegar
-4 tablespoons olive oil
-2 cups tomato juice (i always use v8 and it is seriously delicious)
-2 cucumbers peeled and chopped
-4 large tomatoes, choppped
That's it!

Jenn, we tried this recipe (altered a little bit by only using 1/2 the amount of salt and pureed the tomatoes a bit) - delicious! Post some more good recipes when you can.
